Colombian Empanadas

My mom and I have been making fresh, traditional Colombian empanadas for some time now. These homemade empanadas are especially delicious because they are made with 100% fresh ingredients and are baked instead of fried! They are a great healthy appetizer or finger food for any occasion because they are quick and easy to make!

 

*Cook Time: 30-45 min.

 

*Makes 10 Empanadas

 

Ingredients:

  • 1lb. Ground Beef
  • 5 or 6 Fresh garlic cloves minced
  • 1/2 Green pepper chopped
  • 1 Fresh onion chopped
  • 1/3 cup Fresh cilantro chopped
  • 1 med. sized tomato diced
  • 1 Large Baked potato diced
  • 1/2 tsp. salt
  • 1 packet of Sazon Goya Seasoning Powder

 

You will also need:

Goya Discoc Grandes - ThisĀ is the dough you will be wrapping the empanadas in. They are usually in the frozen food section of your grocery store in packs of 10.

 

Directions:

  • Defrost the Goya Empanada dough wraps, so that they are at room temperature.
  • Slowly start cooking ground beef with all the ingredients together in a pan.
  • While the ingredients are cooking, on a non-stick flat baking pan start laying out the Goya empanada dough. Use as many as you can fit. On the outside of the dough brush on egg white so that they will be easier to close.
  • When the beef filling is completely cooked place about 2 tablespoons of the beef filling in the middle of each Goya empanada dough.

    *Pre-heat oven to 350'

     

  • After filling the dough, fold it so the filling doesn't come out and with a fork, gently press the ends to seal them together.
  • When all the empanadas have been filled and sealed, brush more egg white in the top of the empanadas. Then place as many as you can fit on the non-stick flat baking pan in the oven for about 30-45 min. or until golden brown.

 

Take them out of the oven, wait to cool, then Enjoy!!!
